Pine nuts are a unique product, yet expensive due to their origin, difficulty in harvesting, and unpredictable harvest. Botanically, pine nuts are the seeds of the cones of the Siberian cedar pine and some other species. Unique Features
Rich Composition. Pine nut kernels contain up to 70% fat and up to 20% protein, rich in B vitamins, vitamins E and K, as well as iron, phosphorus, zinc, magnesium, copper, and especially manganese.
High Content of Essential Amino Acids. Pine nut protein differs from most other foods in its higher content of lysine, methionine, and tryptophan—the most deficient essential amino acids.
Culinary Properties. Pine nuts have a distinctive creamy, nutty flavor with hints of pine aroma; their slightly sweet taste is slightly pine-like.
